This is a quick and easy way to make tasty pinto beans in the Instant Pot without having to soak them first. Perfectly seasoned to make a hearty and tasty dish.
Ingredients: 2 cups dried pinto beans, rinsed and picked through. 1 onion, finely chopped. 2 cloves garlic, minced. 1 jalapeo, diced optional for heat. 1 teaspoon ground cumin. 1 teaspoon chili powder. 1 teaspoon smoked paprika. 1/2 teaspoon dried oregano. 4 cups vegetable or chicken broth. 1 bay leaf. Salt and pepper to taste. Fresh cilantro, chopped for garnish.
Instructions: Place the rinsed pinto beans in the Instant Pot. Add chopped onion, minced garlic, diced jalapeo, ground cumin, chili powder, smoked paprika, dried oregano, and bay leaf to the Instant Pot. Pour in the broth and season with salt and pepper. Secure the lid and set the Instant Pot to manual high pressure for 45 minutes. Allow natural pressure release for 15 minutes, then carefully release any remaining pressure. Open the lid and discard the bay leaf. Adjust seasoning if necessary and serve the beans garnished with fresh cilantro. Enjoy your Instant Pot Pinto Beans without soaking!
