In this slow-cooker buffalo chicken pasta, the bold flavors of buffalo sauce, creamy ranch, and tender chicken are all mixed with penne pasta that is just right. This meal is simple and comforting, making it great for busy weeknights or getting together with friends on game day.
Ingredients: 1 lb boneless, skinless chicken breasts. 1 cup buffalo sauce. 1 cup chicken broth. 8 oz cream cheese, softened. 1/2 cup ranch dressing. 8 oz penne pasta. 1/2 cup shredded cheddar cheese. 1/4 cup chopped green onions optional, for garnish.
Instructions: Put chicken breasts, buffalo sauce, and chicken broth in a slow cooker. After 6 hours on low or 3 hours on high, the chicken should be fully cooked and soft. Take the chicken out of the slow cooker and use two forks to shred it. Put the chicken shreds back into the slow cooker. Toss the softened cream cheese and ranch dressing together in the slow cooker until everything is well mixed. Follow the directions on the package to cook the penne pasta until it is al dente. After the pasta is done, drain it and add it to the slow cooker. Stir the pasta to coat it with the buffalo chicken sauce. Shred some cheddar cheese and put it on top. Put the lid on top and cook on low for another 15 to 20 minutes, until the cheese melts and starts to bubble. If you want, you can serve it hot with chopped green onions on top.
