I tried the Porcini-Crusted Tofu with Shallot Pan Gravy and Cilantro-Scallion Mashed Potatoes from The Superfun Times Holiday Cookbook and it...they (two recipes) were both fantastic! The green mashed were super flavorful, but honestly, the porcini tofu could *easily* stand on its own, with either regular mashed potatoes if cilantro or scallions aren't your thing, or a rice pilaf or something! (💡Ding! ) Oooh!
