Jambalaya
Make quinoa in chicken stock. Meanwhile, brown a package of chicken or turkey andouille. Remove from pan. Saute a large onion in sausage remnants and oil, add chopped red and green pepper and 3 stalks celery. Then some garlic plus a small can of tomatoes, a yellow squash, and a zuch diced. Cook down a bit. Return sausage and toss with quinoa. Voila.
Chicken adobo
What I did was:
Sear the meat in a dutch oven-style pot; add 2 c chicken broth; add 1/3 c. soy sauce, 1/3 c. rice vinegar, 1/4 c. sherry vinegar, 1 T brown sugar, 1 T black pepper (i did less), 2 bay leaves, and 12 cloves garlic crushed. Then simmer gently until chicken is fully cooked. Put chicken aside. Simmer sauce more vigorously so it reduces. Put chicken back in the pot, let it recombine, and then you're done. Traditionally served with white rice -- also traditionally marinated in the ingredients above and then cooked, but I didn't have time.
