Ingredients: 1 3/4 cups all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 1/2 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/4 tsp ground cloves. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 2 large eggs. 1 cup canned pumpkin puree. 1 tsp vanilla extract. Nutella or chocolate hazelnut spread for filling. Optional: chopped nuts or chocolate chips for topping.
Instructions: Preheat your oven to 350F 175C. Line a muffin tin with paper liners. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the pumpkin puree and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fill each muffin cup in the tin halfway with the pumpkin muffin batter. Add a dollop of Nutella or chocolate hazelnut spread to the center of each muffin cup.
