Ingredients: 1 cup rolled oats. 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup brown sugar, packed. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup chocolate chips. 1/4 cup chopped nuts optional.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, combine the rolled oats, all-purpose flour, baking soda, and salt. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Fold in the chocolate chips and chopped nuts if using. Scoop spoonfuls of dough and place them onto the prepared baking sheet, spacing them apart. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
