A healthier take on the traditional Chinese takeout dish, these meatballs are made with Paleo General Tso's sauce. They are incredibly flavorful and make a filling meal because they are made with ground chicken and Paleo-friendly ingredients.
Ingredients: 1 lb ground chicken. 1/4 cup almond flour. 2 green onions, finely chopped. 2 cloves garlic, minced. 1 tablespoon coconut aminos. 1 tablespoon sesame oil. 1 teaspoon grated ginger. 1/2 teaspoon sea salt. 1/4 teaspoon black pepper. 2 tablespoons arrowroot powder. 1 tablespoon coconut oil. 1/4 cup coconut aminos. 2 tablespoons honey. 1 tablespoon tomato paste. 1 teaspoon apple cider vinegar. 1/2 teaspoon red pepper flakes. Sesame seeds, for garnish. Chopped green onions, for garnish.
Instructions: Preheat oven to 400F 200C. In a large bowl, combine ground chicken, almond flour, green onions, garlic, 1 tablespoon coconut aminos, sesame oil, ginger, salt, and pepper. Mix until well combined. Shape the mixture into meatballs, about 1 inch in diameter. Place arrowroot powder in a shallow dish. Roll each meatball in the arrowroot powder until coated evenly. Heat coconut oil in a large oven-safe skillet over medium-high heat. Add the meatballs and cook until browned on all sides, about 2-3 minutes per side. While the meatballs are cooking, in a small bowl, whisk together 1/4 cup coconut aminos, honey, tomato paste, apple cider vinegar, and red pepper flakes. Once the meatballs are browned, pour the sauce over them in the skillet. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the meatballs are cooked through. Garnish with sesame seeds and chopped green onions before serving.
