Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup buttermilk. 1/2 cup milk. 1 large egg. 4 tablespoons brown butter, melted and cooled. 1 teaspoon vanilla extract.
Instructions: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, milk, egg, brown butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps. Preheat a non-stick skillet or griddle over medium-high heat and lightly grease it with butter or cooking spray.
