These Oatmeal and Chocolate Cookie Bars are the perfect combination of chewy oats and sweet chocolate chips. They are easy to make and great for sharing with friends and family.
Ingredients: 1 cup unsalted butter, softened. 1 cup light brown sugar, packed. 1/2 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1 1/2 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 3 cups old-fashioned oats. 1 1/2 cups semisweet chocolate chips.
Instructions: Preheat your oven to 350F 175C and grease a 9x13-inch baking pan. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract to the mixture, beating well after each addition. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Stir in the old-fashioned oats until evenly distributed throughout the dough. Fold in the semisweet chocolate chips, making sure they are evenly dispersed. Press the cookie dough evenly into the prepared baking pan. Bake in the preheated oven for 25-30 minutes or until the edges are lightly browned. Allow the cookie bars to cool completely in the pan on a wire rack before cutting into squares.
