I love the idea that Anakin is obsessed with Obi-Wan's gray hairs because he knows he's the one responsible for each and every one of them, could probably recount each dangerous stunt he did that caused them to appear. He'll try to keep Obi-Wan from stressing out over anything else other than him so that nothing "taints" his Master's hair, only he's allowed to give Obi-Wan gray hairs, no one else.
