Breakfast, a recipe from #WeekendAtTheCottage: Oma's Apple Cake Apple cake is one of my favorite treats, for breakfast or dessert! I have several recipes for it, but always enjoy coming across new ones. This one comes from the YouTube channel Weekend at the Cottage and is a family recipe of theirs. The host got it from his cousin, who in turn got it from her maternal German grandmother. It's absolutely delicious! It has the perfect ratio of apples to cake and a WONDERFULLY cinnamon-y flavor! Cinnamon is one of my favorite spices and there are fewer things sadder than an under-cinnamoned apple cake. But this one is perfect! Top it with powdered sugar, pour yourself a cup of coffee or tea or a glass of milk, and enjoy! Note: The measurements below are full the full recipe, which makes a 9X13 cake. I cut them in half to make a smaller cake and baked it in an 8X8 square pan. I also used chocolate chips in place of grated chocolate because they were what I happened to have in my quarantine kitchen and I substituted the nuts for rolled oats because, as I'm sure you know, I don't care for nuts in cake. The recipe also suggests adding dried fruit to the batter and I think that's a great idea. I'd love to try this with cranberries mixed in. Oma’s Apple Cake 3 large eggs, room temperature (I used two for my smaller cake) 1 1/4 cup sugar (1/2 cup + 2 T.) 3/4 cup vegetable oil (6 T.) 2 cups flour 1 t. baking soda 1 1/2 t. cinnamon (3/4 t.) 3 cups peeled and finely chopped apples (1 1/2 cups) 1 cup chopped walnuts, raisins, or both (optional) (I used rolled oats) 14 chocolate chips, or 1/4 oz. grated chocolate (I used 7 chocolate chips) Powdered sugar, for dusting Thanks again to Weekend at the Cottage for the wonderful recipe!
