A quick and satisfying dinner.
Cut up fresh veggies. I had shallots, broccoli, cabbage, carrots, a few mushrooms. Braise well by stirring frequently in three tablespoons oil and season to taste.
Once the veggies have cooked down some, slice up Polish Keilbasa. Let the sausage cook up and let flavors all marry up. (unless you are vegan, then omit the meat.)
Meanwhile you broil some large buttered toasted buns. Once all are toasty, top with the mixture for delicious open-faced sandwiches. (Three buns for a dollar at Fry’s or Ranch Market.)
I washed it all down with a frosty A & W root beer.
Some hot mustard is a variation for the bun, if you think you need more flavor, but I like tasting the different veggies more. 🤩
The leftovers are great is dressing up a cup of ramen later. And it is a great way to use up your veggies.
