Ingredients: 1 lb red potatoes, washed and diced into bite-sized pieces. 1 large onion, thinly sliced. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Preheat the oven to 400F 200C. In a large bowl, toss together the diced red potatoes, sliced onion, minced garlic, olive oil, dried thyme, salt, and pepper until well combined. Spread the potato mixture evenly onto a baking sheet lined with parchment paper or aluminum foil. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges, stirring halfway through cooking.
