# Chocolate Coconut Cookies Hit the Spot this Saturday Night
Alex and I just made these soft chocolate cookies in a jiffy after dinner\. Eat warm out of the oven\. #healthy #cookie #treat #plant\-based #familyfun #cooking
Ingredients:
2 large eggs
2 tablespoons butter melted and cooled
2 tablespoons pure maple syrup
1/2 teaspoon pur vanilla extract
1 cup unsweetened shredded coconut
2 tablespoons unsweetened cocoa powder
Pinch of baking soda
1/4 cups sliced almonds
1/2 cup of raspberries
Directions:
Preheat the oven to 350 F
Lined cookie sheet with parchment paper\.
In a medium\-sized mixing bowl, whisk together the eggs, melted butter, maple syrup and vanilla extract\. Mix in the coconut, cocoa powder and baking soda until well combined\. Fold in the almonds\. Refrigerate the dough for 10 minutes to allow it to firm up\.
Scoop the dough into 12 equal sized dollops on the lined cookie sheet and smooth them out with the back of the spoon\. Bake for 20 to 30 minutes, until slightly firm to touch\.
# Optional: Add one raspberry to the center of each cookie before baking\.
