# Chocolate Coconut Cookies Hit the Spot this Saturday Night

Alex and I just made these soft chocolate cookies in a jiffy after dinner\. Eat warm out of the oven\. #healthy #cookie #treat #plant\-based #familyfun #cooking

Ingredients:

2 large eggs

2 tablespoons butter melted and cooled

2 tablespoons pure maple syrup

1/2 teaspoon pur vanilla extract

1 cup unsweetened shredded coconut

2 tablespoons unsweetened cocoa powder

Pinch of baking soda

1/4 cups sliced almonds

1/2 cup of raspberries

Directions:

Preheat the oven to 350 F

Lined cookie sheet with parchment paper\.

In a medium\-sized mixing bowl, whisk together the eggs, melted butter, maple syrup and vanilla extract\. Mix in the coconut, cocoa powder and baking soda until well combined\. Fold in the almonds\. Refrigerate the dough for 10 minutes to allow it to firm up\.

Scoop the dough into 12 equal sized dollops on the lined cookie sheet and smooth them out with the back of the spoon\. Bake for 20 to 30 minutes, until slightly firm to touch\.

# Optional: Add one raspberry to the center of each cookie before baking\.

#ThrowbackThursday Three years ago I brought my sons on a journey to start anew in Texas. My mantra was “We Gotta Go to Grow”. It was hard to leave our beloved North Carolina where the boys grew up and had wonderful childhood memories with Paul before he died of cancer in 2005. Ten years later in 2015, we moved let go, pursue new dreams, unlock potential and experience unknown possibilities. Little did we know how transforming our move to Texas would be. I’m so proud of the boys’ courage, adventuresome spirit, resilience and ease with change. My analogy is plants need a bigger pot sometimes so they don’t get root bound. Andrew’s and Alex’s roots are going deep and wide for so much growth to come!

My avocado seedling is getting me philosophical today. I’m contemplating the miracle of life, the gift of life, the circle of life and the transformation in life. Today is the 40th anniversary of my mother’s passing. I”m thankful to be alive and to keep growing. I think it’s time to transform my avocado to a pot with dirt. Lots more growth coming soon!

Skillet Peach Crisp

After our trip to the farmers market, we decided to cook a dessert with the fresh Parker Farm peaches, a modernized old fashioned peach crisp recipe from our Paleo cookbook. The peaches turned it to the most scrumptious summer dessert full of goodness Paleo style. Leftovers were just as good warmed up. Here’s the recipe:

Ingredients: Filling: 1/4 cup full-fat coconut milk 1 tablespoon of pure maple syrup 2 teaspoons of tapioca flour 1 teaspoon of pure vanilla extract 1/4 teaspoon of ground cinnamon 6 fresh peaches, peeled and sliced, or 3 10oz bags frozen sliced peaches, defrosted

Topping 1 cups unsweetened finely shredded coconut 1/4 cup of tapioca flour 1/2 teaspoon of ground cinnamon Pinch of sea salt 1/2 cup of ghee, butter or coconut oil 2 tablespoons of our maple syrup

Directions: Preheat the over to 350

In large mixing bowl, mix all of the filling ingredients except the peaches until well combined and evenly dispersed. Mix in the fruit and stir until well coated.

In a separate mixing bowl, whisk together the coconut, tapioca flour, cinnamon and salt until well combined. Use a large spoon to mix in the ghee and maple syrup until everything is mixed together and well dispersed .

Spread the filling evenly in a 1--inch cast iron skillet (or medium sized baking dish 8-in or 9-in will work too). Cover the fruit with the topping mixture, living the edges of the skillet exposed to allow space for bubbling.

Bake for 30-45 minutes until the topping is golden brown and the fruit is soft and bubbling. Serve with vanilla ice cream or non dairy ice cream.

Happy National #AviationDay and #HappyBirthday to my Dad in Heaven. He would be 99 today, ironically born in 1919 on the day that now honors his childhood dream- to be a pilot. I checked his official USAF Active Duty flight log and found he flew 660:05 hours in the T-33. Alex and I were lucky to find a Lockheed T-33 Shooting Star at the Aviation History Museum in Fort Worth yesterday and took some selfies to share on his birthday. Today we thank and honor all the military and commercial pilots who serve, protect us and carry us to where we need to be fast.
