These gluten-free orange almond muffins are wonderfully moist and full of citrus flavor. They're great for a treat in the morning or a snack in the afternoon. They're vegan-friendly and sure to please because they're made with healthy things like almond flour and fresh orange juice.
Ingredients: 1 1/2 cups almond flour. 1/4 cup coconut flour. 1/4 cup tapioca flour. 1/2 cup coconut sugar. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsweetened applesauce. 1/4 cup almond milk. 1/4 cup orange juice. 2 tbsp melted coconut oil. 2 tbsp maple syrup. 1 tsp vanilla extract. Zest of 1 orange.
Instructions: Preheat the oven to 350F 175C. In a mixing bowl, combine almond flour, coconut flour, tapioca flour, coconut sugar, baking powder, baking soda, and salt. In another bowl, mix together applesauce, almond milk, orange juice, melted coconut oil, maple syrup, vanilla extract, and orange zest. Gradually add the wet ingredients to the dry ingredients, stirring until well combined. Line a muffin tin with paper liners or grease the tin with coconut oil. Pour the batter evenly into the muffin cups, filling each about 3/4 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Serve and enjoy!
