This bright and refreshing orange soup is full of warm citrus flavors. This dish will make any meal more enjoyable.
Ingredients: 4 large oranges, peeled and segmented. 1 medium onion, chopped. 2 cloves garlic, minced. 2 cups vegetable broth. 1 tablespoon olive oil. Salt and pepper to taste. Optional: fresh herbs for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, saut until softened, about 5 minutes. Add orange segments and vegetable broth to the pot. Bring the mixture to a simmer, then reduce heat and let it simmer for 15-20 minutes. Using an immersion blender or regular blender, blend the soup until smooth. Season with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.
