Chocolate Oreo Keys Cake
Welcome all to the BEGINNING!
I am so glad that we will be beginning this journey together, I have been a blogger for years now but more on a personal level and now I wanted to share my experience with more. I have always loved baking and cooking, I have been in the kitchen since I was yay high lol. From helping my grandmother with her tea cakes or sweet potato pies to finally baking my own apple pies and cakes. I believe there is something special and peaceful about desserts, whether it is just destroying the stress (desserts backwards is stress, meaning life without desserts is stressful lol) When you walking into a house and smell freshly baked cookies, is probably the best feeling ever! I will be using my new Youtube channel, [( https://www.youtube.com/channel/UCRt4lgXQICWc9R6re-9jbkw ), don’t worry you guys, Ill change the Youtube address as soon as I can lol ] and this blog to bring you guys along my journey of following my dreams!
This has been the LONGEST journey, I am a girl who believes that you have to follow the societal rule, meaning you graduate from high school, go to college, get a job, etc etc., but for as long as I can remember cooking and baking has always been a passion of mine. Now unlike most people who decide they love something, I fought this, I fought it for a good portion of my life because it is not the traditional/societal way. BUT FINALLY, I have decided to take a very large step out on faith and follow my dream 100%! So here I am, coming to you, complete vulnerable and exposed and ready to share it all. I can tell you ahead of time that sometimes it wont be perfect, and sometimes ill be silly and seem cuckoo but I can tell you this, you will get me, raw and 100% everytime and if you commit to this journey with me I promise you wont be disappointed!
So here is your official welcome to:
Now time for the good stuff lol!
Chocolate Oreo Cream Cheese Keys Cake
Now to begin this journey you will need the following ingredients
*You can check the end of this post for great hacks and helpful tips*
~Cake~
1 c. Cocoa Powder
2 ½ c. All Purpose flour
2 c. Sugar
1 ½ tbsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Salt
3 LARGE eggs (room temp)
¾ c. Vegetable Oil
½ c. Sour Cream
2 tsp. Vanilla
~Cream Cheese Frosting~
8 oz. Cream Cheese
½ c. butter
3 c. Powdered Sugar
1 tsp. Vanilla
7 Oreos (I would recommend more lol)
2 tbsp. Milk
Chocolate Sauce ( I use Hershey’s store brand)
It’ll look something like this
As you can see the eggs and milk are not present in the picture SMH
Geez Louis! lol
*Baking Hack*
If your eggs arent at room temperature you can get WARM water and then place eggs in the water for 3-5 minutes.
You also need a little bit of wishful thinking and JAMS
GO BEARKATS! #SHSU
Now to move on to some wrist work…
First you need to preheat the oven, my go to is always 350 degrees. I think the most important thing with cake baking is patience and love, making a cake and icing from scratch is very different from a box cake, you have to be V E R Y patient with your ingredients all the way down to the way you slam the door of the oven (the cake could fall). Now once you are prepare you can start by combine the dry ingredients (flour, sugar, baking powder, baking soda, and salt ) and whisk these ingredients. Once you do that, place it to the side and get out a pot and add 1 ½ cup of water and bring to boil. Once the water is boiling add the cocoa powder to the water and cut off the heat. Get that wrist to whipping lol, whisk, whisk, whisk! and once it reaches a smooth consistency you can place it aside. Now you can start to add the wet ingredients to the dry ingredients (eggs, vegetable oil, sour cream, and vanilla). Once you have those mixed you can fold in the chocolate into the batter and mix complete, if you are using a mixer, make sure it is beat on low speeds. Once that is nice a smooth you can move it to your cake pans!
*Baking Hack*
If you line the bottom of your cake pans with parchment paper the bottom of the cake will come out nice and easy!
Make sure that the cake pans are sprayed with cooking spray to avoid the cake sticking and falling apart. Once your cake pans are prepared, you can divide the cake batter into both pans, evenly (I used 8in pans). Place in the over for 30 minutes or until you can stick a toothpick in the cakes and the toothpick comes out clean. My cakes needed about 40 minutes. After take the cakes out and place on a flat surface for cooling. Now if you have a cooling rack then you are amazing! Place that bad boy on there and let it coooooooool down but if you are like me then you can let it sit out, covered until cool.
*Baking Hack*
You can get 2 CLEAN face towels and wet them, ring them out COMPLETELY and then place on top of your cake, place a small, heavier plate on top. This will get your cake tops to be even for decorating.
While the cake is cooling you can make your icing…
*Baking Hack*
If your butter is not at room temperature, run hot water in a tall cup for 2 minutes, pour out all the water and place cup over the butter. Room Temp butter!
Combine the butter and cream cheese in the mixing bowl, and beat until smooth and fluffy, then add the vanilla. Once this has completely mixed, you can add the powdered sugar, highly recommended: 1 CUP AT A TIME, AT LOW SPEEDS, the sugar will go every where and the already messy kitchen will be worse (remember guys, patience! lol) Once this is mixed in well and smooth you can add the Oreo’s. To get the Oreo's crumbs, take 7 (or as many as you like) and take out the middles, place them in a zip lock baggie and beat it down!
Heyyyyyy Michael!
Once the Oreo’s are in crumbs you can fold it into the icing, and add milk. Mixing up one last time and your icing is complete! I recommend not tasting it because its DELICIOUS and you will keep eating it. LOL
After the cake has cooled ( I let it cool over night), you can ice your cake. You can put icing in the freezer to harden the icing for piping. You can take the warm towel and plate off the cake and you will have a flat cake (YESSSS!), if its not even you can just cut the tops flat. Take a butter knife and detach the cake from the sides, after it has been loosened you can take the first layer and place it on a cake plate, or plain plate. You can add a nice size dollop of icing to that layer and spread onto the top, once covered you can work on the next layer. Again detach the sides of the second layer and then release it from the pan, take the parchment paper off and place on top the first layer. Now add 2 dollops on top and on the sides and make sure the icing is coated completely. Once completed refrigerate the cake for 30 minutes to an hour.
My favorite thing about baking is decorating!
I LOVE PIPING, DECORATING, DESIGNING AND PLACING MY MARK ON MY DESSERTS!
For this cake I decided to cover it in more Oreos and chocolate, because there is no such thing as too many Oreo’s in an Oreo Keys Cake! After smoothing my icing completely, I took 5 Oreo’s and cut the in half (they may crumble a bit but that is okay because they should stay together) and then beat 4 more Oreos in a zip lock. Once the Oreo’s are chopped you can place the halfs around the top off the cake leaving the middle open. Once Oreo’s are neatly placed, spread the Oreo crumbles in the middle of the top of the cake and around the plate at the bottom (this is for added decoration). Lastly take the Hershey’s chocolate sauce and drizzle on the top of cake, any direction and as much as you like!
NOW YOUR CAKE IS COMPLETED!
You can place cake in the fridge or freezer to keep it put together.
Here is my finished product!
Now with this cake, I was very proud at how well it turn out and the finished product. I am not a big fan of sour cream in my cakes but it received rave review so I cant complain!
I hope you all enjoyed the introduction of Keys to Cakes and the making of the Chocolate Oreo Keys Cake!
See you next Sunday!
