I wanted to give myself a challenge with this one and make a dish that's usually pretty difficult to make it simple." She places raw oxtail in a bowl of water and adds lemon juice. "The difficult part is avoiding interaction with direct heat while developing a depth of flavor and achieving the quintessential clear pho broth." She adds a packet of pho spice to a foil pan, using it to pour the spice into a mesh bag. "Without having to pour out a big pot of boiling water." She drains the water from the oxtails and then refills it. "I was able to achieve this goal by giving my oxtails a good long soak with water and lemon juice." She places the ginger root and onions in the slow cooker. "That was a much lower impact way to remove the impurities." She places the oxtails in a foil pan and salts them. "When typically you would par boil the oxtail, dump out the water, wash the pot, wash the oxtail, and then refill up the pot." She places the now cooked oxtail in the slow cooker. "Charred aromatics is a very important part of the pho broths flavor profile. And I was able to char the aromatics without interacting with direct heat by using the air fryer." She takes the pho bag, ginger root, and onions from the broth. "Removing the fat rendered by the oxtail was really easy by just letting the broth chill and then the white layer comes off really easy." "Just before service, I finish off the broth with some fish sauce, some brown sugar, and some M S G." She places the oxtail on top of a bowl of rice noodles, and then spoons some of the broth on top of it. "The rice noodles inspired this entire dish because they don't have to be boiled.
