Palawan honey is widely considered some of the finest in the Philippines, often referred to as "Liquid Gold" from the country's "Last Frontier." Unlike commercial honey, it is primarily harvested from the wild by indigenous communities within Palawan’s protected rainforests.
1. Unique Characteristics
Color & Texture: Most Palawan honey is Dark Amber in color. Because Palawan is very humid, the honey is naturally "runny" or has a lower viscosity compared to thick, store-bought varieties.
Flavor Profile: It has a complex, earthy, and floral taste. Since the bees forage from diverse forest blossoms (wildflowers, narra, and citrus trees), the flavor can vary significantly between batches—ranging from sweet to slightly tangy or woody.
Raw & Unprocessed: Authentic Palawan honey is typically "raw," meaning it is unheated, unpasteurized, and unfiltered. This preserves the natural enzymes, pollen, and propolis.
