​Unlike the sweet "hamonado" style found in Manila or Pampanga, Ilocos longganisa is a "de recado" (spiced) variety. It is a breakfast staple, usually served as part of a LongSiLog (Longganisa, Sinangag/fried rice, and Itlog/egg).

​Flavor Profile: It is defined by a heavy use of local garlic and Sukang Iloko (a dark, naturally fermented sugarcane vinegar). This gives it a sharp, tangy kick that cuts through the richness of the pork.

​Appearance: They are typically small, plump, and yellowish-orange (from achuete or annatto). They are often air-dried or hung in public markets to cure.

​Texture: It uses a mix of lean ground pork and pork fat. Authentic versions have a slightly coarse texture and a "snap" from the natural hog casing.

Palawan honey is widely considered some of the finest in the Philippines, often referred to as "Liquid Gold" from the country's "Last Frontier." Unlike commercial honey, it is primarily harvested from the wild by indigenous communities within Palawan’s protected rainforests.

​Color & Texture: Most Palawan honey is Dark Amber in color. Because Palawan is very humid, the honey is naturally "runny" or has a lower viscosity compared to thick, store-bought varieties.

​Flavor Profile: It has a complex, earthy, and floral taste. Since the bees forage from diverse forest blossoms (wildflowers, narra, and citrus trees), the flavor can vary significantly between batches—ranging from sweet to slightly tangy or woody.

​Raw & Unprocessed: Authentic Palawan honey is typically "raw," meaning it is unheated, unpasteurized, and unfiltered. This preserves the natural enzymes, pollen, and propolis.
