Spiced Carrot Buckle with Pecans ~5 carrots shredded 1 cup almond flour 1/4 cup coconut flour 1/2 tsp baking soda 1 tsp cinnamon 1/2 tsp cardamom 1/4 tsp ginger 3 eggs 2 T honey 2 T olive oil 1/2 cup almond milk 1/2 cup chopped pecans 1. Preheat oven to 325 2. Combine dry goods in mixing bowl. 3. Combine wet good in another mixing bowl 4. Mix wet goods into dry goods. 5. Fold carrots into better 6. Pour batter into a loaf pan. 7. Sprinkle pecans on top. 8. Cook for ~45-50 minutes (until a knife comes out clean) 9. Enjoy!
