Perfect for cozy mornings or dessert, this Warm Caramel Apple Pie Bread is a delicious Paleo and gluten-free treat. Made with almond and coconut flour, honey is used to sweeten it, and diced apples and warm spices are added for flavor. The rich caramel sauce is a delicious way to finish.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1 tsp baking soda. 1/2 tsp salt. 1 tsp cinnamon. 1/2 tsp nutmeg. 3 large eggs. 1/4 cup honey. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 2 medium apples, peeled and diced. 1/4 cup chopped pecans optional. 1/4 cup coconut sugar for caramel topping. 2 tbsp coconut milk for caramel topping. 1 tsp vanilla extract for caramel topping.
Instructions: Set oven temperature to 175C 350F. Spread coconut oil in a loaf pan. Almond flour, coconut flour, baking soda, salt, cinnamon, and nutmeg should all be combined in a big bowl. Whisk eggs, honey, melted coconut oil, and vanilla extract in a different bowl. Add the wet ingredients to the dry ingredients gradually and stir until thoroughly blended. Add chopped pecans if using and diced apples and mix well. Fill the prepared loaf pan with batter. When a toothpick inserted into the center comes out clean, bake for 45 to 50 minutes. As the bread bakes, get the caramel topping ready. Melt the coconut sugar, coconut milk, and vanilla extract in a small saucepan over medium heat. Stir continuously for approximately five minutes, or until sugar is dissolved and mixture thickens into caramel sauce. When the bread is finished, take it out of the oven and allow it to cool slightly. Over the warm bread, drizzle some caramel sauce. Cut into pieces and present. Have fun!
