Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/4 cup coconut sugar. 1/2 tsp baking soda. 1/4 tsp salt. 2 tsp ground cardamom. 2 large eggs. 1/4 cup coconut oil, melted. 1/4 cup unsweetened almond milk. 1 tsp vanilla extract. 1/4 cup maple syrup. Coconut oil or cooking spray for greasing the donut pan.
Instructions: Preheat your oven to 350F 175C. Grease a mini donut pan with coconut oil or cooking spray. In a mixing bowl, combine almond flour, coconut flour, coconut sugar, baking soda, salt, and ground cardamom. In a separate bowl, whisk together the eggs, melted coconut oil, almond milk, vanilla extract, and maple syrup. Pour the wet ingredients into the dry ingredients and mix until well combined. Spoon the batter into the greased mini donut pan, filling each cavity about 3/4 full. Bake in the preheated oven for 12-15 minutes or until the donuts are golden and a toothpick inserted comes out clean.
