Ingredients: 2 large chicken breasts. 1 cup fresh spinach. 4 oz cream cheese. 2 cloves garlic, minced. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. 2 tbsp olive oil.
Instructions: Warm the oven up to 190C 375F. Make butterfly shapes in the chicken breasts by cutting them across the middle but not all the way through. Cheese, garlic, salt, and pepper should all be mixed together in a bowl with spinach. Fill each chicken breast with the spinach mixture, then use toothpicks to close and hold them together. In a pan, heat the olive oil over medium-high heat. The chicken breasts should be golden brown on both sides after you add them. This should take about 3 to 4 minutes per side. Place the skillet in an oven that has already been heated up. Bake for 15 to 20 minutes, or until the chicken is fully cooked and the juices run clear. Take out the toothpicks before serving.
