We were lucky enough to visit Sicily recently and had a terrific guide who took us to lunch in a local, seaside restaurant where he suggested I try a dish called pani cunzatu. Of all the meals we had on a fantastic 2-1/2 week trip, this was THE BEST. It’s basically a “salad sandwich.” Made with fresh grilled tuna, tomatoes, sun dried tomatoes, olives, capers, red onions, burrata and olive oil on top of toasted Italian bread. By the time you get down to the bread, it’s soaked with juices from everything. All I can say is: MORE PLEASE!
