I went to a mont blanc making class today! It was run by UK-based Japanese pastry chef Suzue Aoyama. We made matcha and houjicha Japanese-style mont blanc cakes, and they were DELICIOUS. It was a really fun class, and as you can probably tell my piping was a bit wobbly (I'm so out of practice!), so it was great putting my pastry skills to use again.
