These Chocolate Drizzled Peanut Butter Popsicles are a delightful frozen treat combining the richness of peanut butter with the sweetness of honey and a decadent chocolate drizzle. Perfect for a hot summer day!
Ingredients: 1/2 cup creamy peanut butter. 1/4 cup honey. 1/2 cup milk. 1/2 cup Greek yogurt. 1/4 cup chocolate chips. 1 tablespoon coconut oil. 1/4 teaspoon vanilla extract. Popsicle molds and sticks.
Instructions: In a microwave-safe bowl, combine the peanut butter and honey. Microwave for 20-30 seconds or until it's easy to mix them together. Stir in the milk, Greek yogurt, and vanilla extract until the mixture is smooth and well combined. Pour the peanut butter mixture into the popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each mold and freeze for at least 4 hours or until solid. Once the popsicles are frozen, prepare the chocolate drizzle. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring each time until the chocolate is completely melted and smooth. Remove the popsicles from the molds by briefly running them under warm water to loosen. Place them on a parchment paper-lined tray. Drizzle the melted chocolate over the peanut butter popsicles, allowing it to harden quickly. Serve your Chocolate Drizzled Peanut Butter Popsicles immediately or store them in an airtight container in the freezer for later enjoyment.
