Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 1 cup brown sugar, packed. 2 large eggs. 1 tsp vanilla extract. 2 cups all-purpose flour. 1/2 cup cocoa powder. 1 tsp baking soda. 1/2 tsp salt. 2 tbsp instant coffee granules. 1 cup semisweet chocolate chips. 1 cup chopped pecans.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Dissolve the instant coffee granules in 1 tablespoon of hot water and add to the wet ingredients. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chocolate chips and chopped pecans. Drop spoonfuls of dough onto the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
