Ingredients: 4 chicken breasts. 1 cup pecans, finely chopped. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 2 tablespoons Dijon mustard. 2 tablespoons honey. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. In a shallow dish, mix chopped pecans, breadcrumbs, and Parmesan cheese. In another dish, combine Dijon mustard, honey, olive oil, salt, and pepper. Coat each chicken breast in the mustard mixture, then dredge in the pecan mixture, pressing gently to adhere. Place the coated chicken breasts on a baking sheet lined with parchment paper.
