Cover the dish/container and refrigerate for approximately 7 days to allow the cheese to absorb the flavors of the wine. Remove the cheese from the wine marinade and allow it to come to room temperature before serving. Serve the Pecorino Ubriaco al Sangiovese with crusty bread.
