Well, Stellaris: Nomads is a bit of a banger, at least it is to me. Fiddling with your waystation network and boosting sympathetic empires is the kind of management task that is like catnip for me. It reminds me of playing a Merchant Republic in CK2 with a touch more of a wandering flair. I like the clear difference between earlygame, where you hop around surveying and harvesting resources, and early midgame, when the map gets filled in and you transfer to the slow and steady trickle of resources harvested from waystations. Also, my beloved (Specialist Science Rushes) and my Other Beloved (Machine Hive Mind with Virtual Ascension) are back from the war, on account of how hideously efficient nomadic empires can get. As usual, I wish there was a bit more There there wrt the diplomacy, but at least there's a reason to engage with it now since it's way easier to maintain a safe waystation network when the core of it is placed in an empire that is stable and likes you.
