Pepper cake - 1915
I have invented a cake!
It does not have a name yet. I am hesitant to call it a chai cake because all the spices that make traditional chai are not present. I am hesitant to call it a spice cake although that's what it is because that's not quite what happened here.
Let's call it Pepper Cake.
So start by making a basic white cake. You can use a packaged cake mix or you can use your recipe of choice. I used this https://www.food.com/recipe/simple-white-cake-400290.
So before you start you're gonna boil some water and on a cup of water (or just a little more) steep about two tablespoons of loose tea leaves. Adjust to the strength of your tea, but basically go for double or triple what you'd make for a cup you're going to drink. You're gonna want the strongest black tea leaves you can find. I used some probably middle eastern brand that is sold by the pound in my supermarket so I can't tell you it's name. But anything strong, like an Irish breakfast or maybe a Darjeeling would work nicely. Steep about ten minutes as you make the rest of the cake.
So you're gonna make the cake but HALF the vanilla extract. we don't need it where were going. Then when you get to the last step, drain the tea leaves and add the tea instead of water or milk. Mix.
Now add your spices. I'm not gonna tell you how much to use because spices are such a personal taste thing, and let's be real I didn't stand there and measure them. But you're gonna want to add fresh cracked black pepper, nutmeg and cinnamon. I'd say it's about a 4:2:1 ratio. So not much cinnamon, a good amount of nutmeg and then just do your best impression of the cook from Alice in Wonderland and add MORE PEPPER.
Bake.
While you're baking make a basic glaze. That's just powdered sugar and water, but instead of water, you guessed it, MORE TEA. you can leave the glaze basic to cut the spice or you can spice it in a similar way if you like the spice.
Glaze the cake while hot, cool, and enjoy!
