OHHH, silly thing, but I never actually considered the four of them dating, but that would be such a fun dynamic, actually!
Percy and Astrid are definitely friendly competing (and maybe flirting while they are at it) when it comes to arm-wrestling or sports in general, and I can see Annabeth and Hiccup having an awesome time gushing and nerding out about architecture, engineering, and building materials! Hiccabeth probably sketch and plan out blueprints together, too! And oooooo date nights with the four of them have Annabeth, Hiccup and Percy competing to lie on Astrid's chest because she's the warmest of the bunch... Annabeth is probably the one who comes up with the best date night ideas when they're all free to hang out... For more domestic scenarios, I'm pretty sure Hiccup is a good cook, so the three of them would love his meals and do anything for his desserts. I don't know why, but I imagine Percy being the one who wakes up the earliest! He makes sure to clean the dishes and maybe prepares a hot bath for them while the gang is asleep.
