Pernil cooked in a slow cooker is very tender and full of flavor. It's great for a cozy family dinner or a special event. As the pork shoulder cooks slowly to perfection, the citrus juices, garlic, and spices give it a flavor that you can't resist.
Ingredients: 5 lbs pork shoulder, bone-in. 1 tbsp olive oil. 8 cloves garlic, minced. 1 tbsp oregano. 1 tbsp cumin. 1 tbsp salt. 1 tsp black pepper. 1/2 cup orange juice. 1/4 cup lime juice. 1/4 cup white vinegar.
Instructions: Using a sharp knife, make small incisions all over the pork shoulder. In a small bowl, combine olive oil, minced garlic, oregano, cumin, salt, and black pepper to make a paste. Rub the paste all over the pork shoulder, making sure to get it into the incisions. Place the seasoned pork shoulder into the slow cooker. In a separate bowl, mix together orange juice, lime juice, and white vinegar. Pour the juice mixture over the pork shoulder in the slow cooker. Cover and cook on low for 8-10 hours, or until the pork is tender and falling apart. Once cooked, shred the pork using two forks and serve with your favorite sides.
