Scallop Ceviche and Flank Steak with Chimichurri
If there is one fact that has held true for Dutch Oven Sundays [other than the certainty of deliciousness and a promise of cuisinal (new word?) exploration]…is the fact that Adam never reveals the menu until the unveiling. Frustrating at times (particularly when Val is trying to pair the perfect dessert), we now know…that his mystique pays off tenfold.
In preparation for Ryan and mine’s (me=Sean) upcoming trip to Peru, Adam took us on a tour of the South…South America that is. As we sat down to a game of Catan, drinks in hand, Adam served us a martini glass full of his (hopefully soon to be famous) Scallop Ceviche (<3 <3 ceviche). Perfectly balanced with diced peppers, onions, mango and a KA-POW combo of citrusy delights, his ceviche rivaled the best. The thing is…only Adam knew that this was just the starter.
If we weren’t already picturing ourselves riding on top of Alpacas at the peak of Machu Picchu slurping up the remnants of Adam’s ‘cev-each’ (chef lingo), completely satisfied with the meal we were presented, Adam surprised us yet again. “THERE’S MORE”, he said—our hearts skipped a beat. Then came the main course….perfectly mid-rare, sliced flank steak with a spicy and punchy Chimichurri (OMG another personal fave).
*I’m ready for my wings and halo now*
If that wasn’t enough, and we weren’t already in a fleecy white cloud of culinary ecstasy…Val whipped out a selection of assorted Cannoli… OK, K.O…that’s a wrap…winner, winner, chicken dinner. What an end to a terrific showing. THE BAR HAS BEEN RAISED.

Still in Peru! The Amazon was fun, now it's time for 5 star restaurants and hotels in Lima! It will be nice to not be swarmed by Mosquitos!
Well I am off to Machu Pichu tomorrow! So excited that it is finally spring break! I will be gone for a week so do not worry :P I will see you all soon my lovlies :) I love you all very dearly
