So I have a video of chef Sabatino teaching me how to properly form bread dough for baking and I catch myself watching it fairly often. It bothers me because I miss working there and some days I really regret my decision to put school over work however I find great joy in the video and I hope to get a chance to join his team once again and show him he was right about me and that one day I will make a great chef. Every day I remember the things he told me. Show up to work every day and push yourself to out preform everyone there, out cook your chefs, you may not be better but you'll get better everyday. Never stop learning. The minute you stop learning is the minute you need to get out of the kitchen even if it's just to go to another kitchen learn a new cuisine just never stop. Show up first, leave last. Be the first one in the kitchen and the last one to leave every day. This is your life, your home, and your family now. And one of my favorites that I use myself now is his famous "teamwork makes the dream work!" I try and keep to all of this every day. Every morning I look at my station and my mise and think would this be acceptable to chef Sabatino?
