Also, I finally visited Pho Thin Tokyo! There is only one thing on the menu and it is beef pho and it is WONDERFUL. The legend is that the owner fell in love with the food at the original Hanoi location and decided to stand outside the restaurant until the chef taught him to make it. I’m not sure how true that is, but there’s part of me that needs to believe it……

i'm making phở bò (vietnamese beef noodle soup)!

broiled beef bones not necessary or even traditional, AFAIK. i'm only missing stew beef, which i guess i'll add in later.

but it already smells so good, with the ginger, star anise, bruléed onion and (my addition) makrut lime leaf...
