There are over 1,000 tea and tea related shops within the city. Located in Fujian, Province which many believe is the home of Oolong Tea. "Chaozhou Style" tea brewing uses a smaller gaiwan with no saucer, also no cha hai or sharing pitcher. The brewed tea is poured quickly from cup to cup, first cup one, then cup two, cup three, back to cup two and finishes with cup one. The result, when done correctly is to have each tea drinker have tee that is the same for everyone. The tea being brewed is Danchong or Phoenix Mountain Oolong. The gaiwan is filled to the top with the dry leaves and very quickly rinsed twice with almost boiling water. The subsequent infusions are prepared very quickly, poured into tiny cups, and consumed very quickly too. Their are more than 20 different varieties of Danchong each with their own aroma and taste characteristics.
