On tonight’s episode of the Coronavirus Cooking Diaries, I give you to the Northeastern delicacy called the Ramp. I like to describe ramps as a cross between garlic, a small leek and a spring onion. Ramps are smaller than scallions and leeks, taste stronger than a leek and are more garlicky than a scallion. I was able to score some when my friend @cheftomarket picked up some for me at the farmers market. I decided to pickle the bulb and stems, blanch the ramp tops yo make compound butter and pesto and make kimchi with the roots. There is nothing better than charred pickled ramps and they taste delicious! If you never had ramps give them a try you won’t be sorry. Ramps are only around for a few weeks in April and May and are found in the Apalachin Mountains.
