Ramp season isn’t far off!  This hot and tangy relish is a tasty way to preserve the wild foraged goodness of ramps so you can enjoy it all summer long! Ramp and Hot Pepper Relish is also versatile! Slather over hot dogs and burgers, make a quick tartar sauce for Maryland crab cakes, add it to potato salad, Pimento cheese deviled eggs and so much more!

I ate a few wild leek leaves today and it tasted and felt incredible! Sweet and oniony and bright! Apparently, they are full of vitamins A and C and lots of minerals. I was lifting the entire plants in order to transplant a couple dozen into a patch in the herb garden, as recommended by Terrylyn Brant, who no longer harvests these endangered native foods from the wild. We also had a patch in a bed under a tall pine tree at the Roughwood Seed Collection. As I was lifting these, I tried to tell them about their new life and how they’d be taken care of and have lots of room to spread, but it sort of felt like trying to convince people to move to the moon. Wild leaks aka ramps make an amazing summer salad. I started throwing stuff together and ended up with the best tasting salad EVER! I hope I can remember everything in this recipe so I can make it for a potluck someday, I'm sure it will be a crowd pleaser. I was trying to figure out what to do with the ramps I found, and potato salad kept coming to mind. I started there but ended up getting really creative and I'mvery pleased with the outcome. First I cut up the ramp leaves and bulbs, in my food processor I added the the cut ramps with 1 cup of Earth Balance Butter and 1/4 cup lemon juice, I put it into a sealed container and let that sit over night. I put 1 cup of cashews into a bowl and topped with boiling water, let that sit for 1 hour. I diced 3 red apples, half a purple onion, 1 large dill pickle, 5 stalks of celery, then julienned 1 large carrot. I added that to a large bowl with a can of rinsed and drained chick peas, 1 tablespoon minced garlic and mixed it thoroughly with the ramp butter, I added garlic powder, italian seasoning and dill then placed mixture into the fridge. I boiled 3 large baking potatoes, once cool I diced them and added to the mix. I put 1 cup vegetable oil with 1/2 water and 3 tablespoons apple cider vinegar and emulsified until smooth- before adding that to my mixture, I drained my cashews and put them into the food prcessor with 1/2 cup of water and 1/4 cup nutritional yeast flakes and processed until smooth- I poured this onto the mixture first and mixed well then I added the emulsified oil. Season with salt and pepper to taste.
