Tonight's inspiration for dinner came in part from this recipe for honey grilled pork chops. After looking in the pantry and the refrigerator, I was searching for inspiration for pork loin chops and pineapple. I found several different spins on teriyaki pork chops with pineapple baked or grilled in foil. Like the foil idea but teriyaki is something we do fairly often so that didn't inspire me enough to go yeah, this is what's for dinner.
Then I found this recipe which I loved the idea of the curry powder, pineapple and honey, but I am pretty sure my hubby will not be adventurous enough to give curry spices the chance they deserve.
So no worries, I am going to do two different marinades for the pork and put them in separate tin foil packets on the grill!
One will be the honey curry marinade and the other I am going to follow the same basic marinade recipe but substitute a tablespoons or two of teriyaki for the curry. Both marinades may get a touch of lime juice and garlic too, but we will see. (You know I can't leave well enough alone by now....)
I will marinade the chops as directed but then put them on foil top them with pineapple rings and then close the packet up and grill for 20 minutes while I make some jasmine rice in my rice cooker.
Not in the mood for pork? You could definitely try the same recipe with chicken breast instead!
