Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup crushed pineapple, drained. 1/4 cup buttermilk. 1/4 cup unsalted butter, melted. 1 large egg. 1/2 teaspoon baking powder. 1/4 teaspoon baking soda. 1/4 teaspoon salt. 1/4 teaspoon vanilla extract. 6 maraschino cherries, halved. 1/4 cup brown sugar. 1/4 cup unsalted butter, melted. 1/2 teaspoon ground cinnamon. Cooking spray or oil for frying.
Instructions: Mix together the flour, baking soda, baking powder, and granulated sugar in a mixing bowl. Mix the crushed pineapple, buttermilk, melted butter, egg, and vanilla extract in a separate bowl. Mixing until just combined, pour the wet ingredients into the dry ingredients. Preheat oil in a deep fryer or doughnut pan to 350 degrees Fahrenheit 175 degrees Celsius. Combine the ground cinnamon and brown sugar in a small bowl. If using a frying pan, brush with oil or use cooking spray on the doughnut pan. In each doughnut mold, place a half of a maraschino cherry; if frying, save the cherry for a topping later. Each cherry in the doughnut pan should have a small amount of the brown sugar-cinnamon mixture sprinkled on top. Cover the cherries with doughnut batter, making sure to fill each mold to about two-thirds of the way. If using a doughnut pan, bake in a preheated oven for 12 to 15 minutes, or if using a frying pan, fry in hot oil until golden brown. After removing the doughnuts from the pan, place them on a wire rack to cool slightly. While still warm, use the remaining melted butter to brush the tops of the doughnuts and then top with additional brown sugar-cinnamon mixture.
