Instead of regular sliders, try these Black Eyed Sweet Potato Sliders instead. They are tasty and good for you. They taste great and are full of plant-based protein, so they're a great meal or snack.
Ingredients: 1 cup cooked black-eyed peas. 1 cup mashed sweet potato. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1 tablespoon nutritional yeast. 1 teaspoon smoked paprika. 1/2 teaspoon cumin. Salt and pepper to taste. Whole grain slider buns. Toppings of choice lettuce, tomato, avocado, etc..
Instructions: In a mixing bowl, combine the cooked black-eyed peas, mashed sweet potato, chopped onion, minced garlic, nutritional yeast, smoked paprika, cumin, salt, and pepper. Use a fork to mash everything together until well combined. Form the mixture into small patties, sized to fit your slider buns. Heat a non-stick skillet over medium heat and lightly oil it. Cook the patties for 3-4 minutes on each side, or until golden brown and crispy. Assemble your sliders by placing each patty on a bun and adding your favorite toppings.
