This Chicken and Asparagus Fettuccine recipe combines tender chicken, fresh asparagus, and creamy Parmesan sauce for a delightful pasta dish that's perfect for any occasion.
Ingredients: 8 oz fettuccine pasta. 2 chicken breasts, thinly sliced. 1 bunch asparagus, trimmed and cut into bite-sized pieces. 2 cloves garlic, minced. 1 cup heavy cream. 1/2 cup grated Parmesan cheese. 2 tablespoons olive oil. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Follow the directions on the package to cook the fettuccine until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. For about one minute, until the garlic smells good, add the minced garlic. Put the chicken slices in the pan and cook for about 5 to 6 minutes, until the chicken is no longer pink. Add the asparagus to the pan and cook for three to four more minutes, until it is tender but still has some crunch. Add the heavy cream and grated Parmesan cheese. Keep stirring the sauce for about two to three minutes, or until it gets thick. Add pepper and salt to taste. When you add the cooked fettuccine to the pan, toss it around so that the sauce covers all of it. Add chopped parsley as a garnish before serving.
