how would I go about beheading and replanting a succulent to revive a stretched plant? I've seen people mention it before but I'm pretty confused... is there like a step by step guide you'd recommend following?

Has an okay guide. No pictures or anything but it’s fine. It’s pretty straight forward, you cut the top off the plant, let the new cutting dry for a day, and then can either plant it or wait for roots before you plant it. You generally want a bit of stem to stick into the soil (an inch maybe) but if you cut it so there isn’t any or not much it will still work. You may need to pull a few bottom leaves off this cutting to make your stem bare so keep that in mind when you’re thinking about where to chop. Those leaves that are pulled off will also propagate so feel free to keep them around and wait for them to grow, too, if you’d like. :)
The bottom portion of the plant you have left over from beheading can also be taken care of as normal and will push out babies from it’s bare stem given time.
I believe I have some posts of my own tagged as “beheading” or “succulent beheading” or maybe even “propagation” so you can check in there, I’m not sure what I’ve got to be honest but i do recall chopping and posting about it a few times. Once you get your first taste of chopping it’s really fun and getting to chop a whole bunch down at once is rather fun.
