R is for Russia
Hello everybody!
Today was the day to dig out the old Cossack hat as we’re off to Russia! We had a starter of belinis with smoked salmon and caviar (lumpfish of course!). Then for the main course we had a Russian classic ‘Golubsti’. This is mince beef mixed with boiled rice or more traditionally buckwheat wrapped in cabbage leaves. Poach the cabbage parcels in podliva for 30 mins. Very lovely and such a good way of using up leftovers in the cupboards!
