Today I had an unexpected day of painting for my family and when we got home, I was exhausted. I fell asleep on the couch, and woke up so grateful that I had prepared dinner in the crock pot before we left this morning!! Tonight I made these shredded chicken creamy taquitos seasoned with homemade taco seasoning, salt and pepper. That’s it. To make them, I put two frozen chicken breasts in the crock pot with about a half a cup of water and put it on high. When I came back about 6 hours later, the chicken was all the way cooked through and almost shreddable. I flipped them over, seasoned with the seasonings and put one block of cream cheese in and put the crock pot on low until we were ready to eat. That it! Simple and so needed after a day of working and not eating anything but Greek yogurt this morning.
