Potato Bacon Pie is a hearty and delicious dish that combines the creamy texture of potatoes with the savory flavor of bacon and cheese. It's perfect for a cozy dinner or a special brunch.
Ingredients: 6 potatoes, peeled and thinly sliced. 6 slices bacon, cooked and crumbled. 1 onion, finely chopped. 1 cup shredded cheddar cheese. 1/2 cup heavy cream. 2 eggs. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Preheat the oven to 375F 190C. In a skillet, heat olive oil over medium heat. Add chopped onions and saut until translucent. Layer half of the sliced potatoes in a greased pie dish. Sprinkle with half of the crumbled bacon, onions, and shredded cheese. Repeat layers with remaining potatoes, bacon, onions, and cheese. In a mixing bowl, whisk together heavy cream, eggs, salt, and pepper. Pour the mixture evenly over the layered potatoes. Cover the pie dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 20-25 minutes or until the potatoes are tender and the top is golden brown. Let the pie cool for a few minutes before slicing and serving. Enjoy!
