There’s so much food happening at my house because, you know, Thanksgiving. So dinners for the last couple of days have been a bit disorganized. Last night we had potatoes for dinner. Also some veggies. Enough for me! These were so good: boil about 2 dozen baby potatoes (in skin) until soft. Drain and press them down on a board until moderately smashed. Heat 2 tablespoons olive oil and 1-2 tablespoons butter in a (best is cast iron)pan and when the butter melts, add the potatoes. Sprinkle with salt and freshly chopped rosemary. That’s it! Cook the potatoes, turning them occasionally, for maybe 15 minutes or until they’re crispy.
